How to Make Your Perfect Sisig

Sisig is a popular Filipino dish made with chopped, seasoned meat, usually pork, and is typically served as an appetizer or main course. This savory and spicy dish is easy to make and can be customized to your liking. In this article, we’ll guide you through the steps to make a classic pork sisig dish.

Ingredients:

  • 1 lb of pork belly, boiled and grilled or roasted
  • 1/2 cup of pork liver, boiled and diced
  • 1 large onion, diced
  • 3-4 cloves of garlic, minced
  • 2-3 green onions, chopped
  • 1-2 red chili peppers, minced
  • 2 tablespoons of oil
  • 2 tablespoons of soy sauce
  • 2 tablespoons of vinegar
  • 1 tablespoon of sugar
  • Salt and pepper, to taste

Instructions:

  1. Start by boiling the pork belly and liver until tender. Drain and let cool, then grill or roast until crispy. Once done, chop the meat into small pieces and set aside.
  2. In a large pan, heat 2 tablespoons of oil over medium-high heat. Once hot, add the diced onions and garlic, and sauté until the onions are translucent.
  3. Add the chopped pork belly and liver to the pan and continue to cook for about 5-7 minutes or until lightly browned.
  4. Add the soy sauce, vinegar, and sugar to the pan and stir everything together. Cook for another 5-7 minutes, stirring occasionally.
  5. Add the minced chili pepper and continue to cook for another 2-3 minutes. If you prefer your sisig spicier, you can add more chili pepper or some chili flakes.
  6. Finally, add the chopped green onions to the pan and mix everything together. Cook for another minute or so, and then remove from heat.
  7. Taste your sisig and season with salt and pepper to your liking.
  8. Serve your sisig hot, either as a main course or appetizer. It’s typically served with steamed rice or as a topping on a bed of lettuce or cabbage.
